All you youngsters and your fancy shmancy new music! Back in my day, video game music was just a bunch of Bleeps and Bloops and we loved it! (I kid!)
Here are a few of my personal favorites.
- Streets of Rage - Stage 8
- Panzer Dragoon Saga - Sora Mi Areru Ec Sancitu
- The Neverhood - Homina Homina
- Phantasy Star III - Intro
- Samurai Shodown 6 - Imperial Feast
Those are just a smattering and I feel are great examples of a huge variety of styles.

The Halo series got the best OST of all time but MGSV comes close.
There are SO much good music from games out there so I cant list em all.
Final Fantasy - each part have memoriable tracks
Metal Gear Solid - Some songs still in my playlist
Bioshock - some songs I close my eyes to and just take in
Halo - So much good music
Mass Effect - You can put on any track at any time and I'll go "OMG thats Mass effect music!"
Assassins Creed 2 - Still play the music now and then
Journey to Silius - A full solid lineup?
The Elder Scrolls V: Skyrim - After the hundreds of hours Ive spent here I love the music to acompany me
The Last of us - Magical and a bit scary.
World Of Warcraft - Songs that fill me with nostalgia

@Pat I was immediately only thinking of original music, but I would say Fallout 3 has my favourite soundtrack of licensed music. It might have contributed to my disappointment in Fallout 4, that it didn't add many new songs.

Can't have this discussion without mentioning Sonic 3 & knuckles. Also Outcast that was the first game I remember being fully scored and recorded by a full orchestra

Two games that really stick out for me are Super Mario Galaxy (1 and 2, hard to choose between the two), and The Wonderful 101. Oh man, The Wonderful 101.

MGS4 Love Theme (though, I think this was removed from the final game)
Atelier Iris: Eternal Mana "Prism" Boss Battle
MGSV The Phantom Pain "
MGSV The Phantom Pain "Quiet" Theme
(You can get this in-game via a cassette tape after completing a mission)
DMC3 Battle Music 1 (This is the epic boss battle music)
My other favorite is the one where Dante almost dies, but toughens up after the battle against Dante, he goes down an evolved teng ne gru and gets eaten by a flying dragon of sorts.
Turok 64 "The Ancient City" Theme
Turok 64 Creepy "Catacombs" Theme
Xenogears' "Knight of Fire" Theme (epic boss battle music)
Xenogears' "Invasion" Theme (pre-tournament music)
Xenogears' "Bonds of Sea and fire" (I think this is the main theme of the game)
I'm trying to find ID's music, where he interrupts and reveals himself for the first time. God, that was an awesome introduction to a boss, complete with an awesome OST.
Castlevania: Symphony of the Night's "Prayer" Theme (menu music)
And just about anything after this. Aria of Sorrow offers up some AMAZING tracks. From start to finish, excellent OST's.

Megaman 3 - easily my favorite NES game OST of all time. That Snakeman and Shadowman beat is just too sick not to get down to.
My favorites: Gemini Man, and Snake Man. Epic.
Mega Man 4 has some too, like the opening cinematics, the main select screen, and Wily's Stage 2 (Those green sewers/bathroom-looking BG's)

I dunno if the quality's good, but you get my drift, tho.
Stage 3 - Conduit is my #1 in that game. Once you get in there, you get the sense that something big is about to go down. And it did, several tanks await you in that stage. Once you get past that, oh man... such an accomplishment.

Probably the entire Wind Waker soundtrack. Just listening to the music alone takes you to those moments in the game and you feel the emotion and just how incredible of a journey your accomplishing. 10/10, Masterpiece.

Can't forget this gem. Tears me up.
When my grandmother became terminally ill, we started preparing the funeral proceedings together. She wanted me to pick the music for the ceremony, this was one of the tracks I proposed to her. She agreed, and we did.
Probably the most emotional song I know in video game music history.
